Description

A nostalgic retro casserole called Spinach Fandango, featuring layers of savory seasoned ground beef, creamy spinach, and melted cheddar cheese baked to bubbly perfection. This cheesy spinach and beef casserole offers a comforting, hearty meal perfect for family dinners or potlucks.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 package (10 oz) frozen spinach, thawed and drained
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder

Instructions

  1. Preheat the Oven: Preheat your oven to 350 °F (175 °C) to ensure it reaches the right temperature by the time your casserole is assembled.
  2. Brown the Beef and Onion: In a skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and no pink remains. Drain excess fat thoroughly.
  3. Mix the Sauce: In a bowl, combine the drained beef and onion mixture with cream of mushroom soup, sour cream, and garlic powder. Stir well until fully incorporated.
  4. Assemble First Layer: Grease a casserole dish lightly. Spread half of the beef mixture evenly across the bottom of the dish.
  5. Add Spinach and Cheese: Evenly layer the thawed and drained spinach over the beef mixture, then sprinkle half of the shredded cheddar cheese on top.
  6. Top with Remaining Mixture: Spread the remaining beef mixture over the spinach layer, then sprinkle the remaining shredded cheddar cheese on the very top.
  7. Bake the Casserole: Place the dish in the preheated oven and bake uncovered for 25 minutes until the casserole is hot, bubbly, and the cheese has melted and slightly browned.
  8. Serve and Enjoy: Remove from the oven, allow to cool slightly before serving for best texture and flavor.

Notes

  • For fresher taste, substitute fresh spinach for frozen—steam and drain well before layering.
  • For added texture and crunch, sprinkle crushed Ritz crackers on top before baking.
