Ingredients

Meat and Seasoning

  • 1 lb (450g) ground beef
  • 1 tbsp taco seasoning
  • 1 cup salsa

Layer Ingredients

  • 2 cups tortilla chips
  • ½ cup black beans
  • ½ cup corn

Toppings

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ¼ cup sour cream
  • Optional: jalapeños
  • Optional: green onions


Instructions

  1. Preheat Oven: Set your oven to 180°C (350°F) to prepare for baking the casserole.
  2. Cook Ground Beef: In a skillet over medium heat, cook the ground beef until it is fully browned and no longer pink inside.
  3. Add Seasoning and Salsa: Stir in the taco seasoning and salsa with the beef. Let it simmer for about 5 minutes so the flavors combine and the mixture thickens slightly.
  4. Layer Ingredients: In a baking dish, arrange half of the tortilla chips evenly on the bottom. Spread half of the beef mixture over the chips, then sprinkle half of the black beans and corn on top. Repeat the layering with the remaining chips, beef, beans, and corn.
