Ingredients
Beef Filling
- 500g ground beef
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
Sauce and Assembly
- 1 cup enchilada sauce
- 6 tortillas (corn or flour)
- 1 cup shredded cheese
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the enchiladas.
- Cook Beef and Onion: In a pan over medium heat, cook the chopped onion and ground beef together until the beef is browned and cooked through, breaking it apart as it cooks.
- Season the Mixture: Add cumin, chili powder, salt, and pepper to the cooked beef mixture, then stir in half of the enchilada sauce to infuse the flavors.
- Fill and Roll Tortillas: Spoon the beef mixture evenly onto each tortilla, roll them up tightly, and place them seam-side down in a baking dish.
- Add Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas and evenly sprinkle the shredded cheese on top.
- Bake: Place the baking dish in the preheated oven and bake for 20 minutes or until the cheese is melted and bubbly.
Notes
- Use either corn or flour tortillas based on preference or dietary needs.
- Add beans or corn to the beef mixture for extra texture and nutrition.
- Serve with sour cream or a fresh salad for a complete meal.
