Description
This creamy cheesecake bars recipe features a smooth, rich cream cheese filling baked on a buttery graham cracker crust, perfect for a classic, crowd-pleasing dessert cut into easy-to-serve bars.
Ingredients
Crust
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
Filling
- 16 oz cream cheese, softened
- 2/3 cup sugar
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to ensure it’s ready for baking the bars evenly.
- Prepare Crust: In a mixing bowl, combine the graham cracker crumbs, 1/3 cup sugar, and melted butter. Mix well until the crumbs are fully coated and hold together when pressed. Press this mixture firmly into the bottom of an 8×8-inch baking dish to form an even crust layer.
- Make Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add 2/3 cup sugar, continuing to beat until well combined. Add the eggs one at a time, mixing thoroughly after each addition, then stir in the vanilla extract until the filling is silky and smooth.
- Assemble and Bake: Pour the cream cheese filling over the prepared crust, spreading it evenly. Bake in the preheated oven for 30 to 35 minutes, or until the edges are set and the center is slightly jiggly but mostly firm.
- Chill: Remove the cheesecake bars from the oven and allow to cool to room temperature. Then refrigerate for at least 2 hours to fully set before cutting into 12 bars and serving.
Notes
- Use room temperature cream cheese to ensure a smooth filling without lumps.
- Press the crust firmly to prevent it from crumbling when cutting.
- Chilling time is essential for the bars to hold their shape when sliced.
- For added flavor, consider topping with fresh berries or a fruit compote after chilling.
- Store leftovers covered in the refrigerator for up to 4 days.
