Description
Caramel Custard is a silky, creamy dessert featuring a smooth vanilla-infused custard topped with a rich golden caramel sauce. This classic homemade treat is simple, elegant, and perfect for family dinners or special occasions.
Ingredients
For the caramel:
- ½ cup granulated sugar
- 2 tablespoons water
For the custard:
- 2 cups whole milk
- 4 large eggs
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven: Preheat your oven to 325°F (160°C) to prepare for baking the custard.
- Make caramel: In a small saucepan, combine sugar and water. Heat over medium heat until the sugar melts and turns a golden amber color, then immediately pour the caramel into individual ramekins or a baking dish, tilting to coat the bottom evenly.
- Warm milk: Warm the milk in a saucepan until it is steaming but not boiling to avoid curdling.
- Mix eggs and sugar: In a bowl, whisk together the eggs, sugar, vanilla extract, and a pinch of salt until fully combined.
- Combine milk and eggs: Slowly pour the warm milk into the egg mixture while whisking continuously to temper the eggs and create a smooth custard base.
- Strain mixture: Strain the custard mixture through a fine-mesh sieve to ensure a silky smooth texture free of lumps.
- Prepare for baking: Pour the custard over the caramel layer in the ramekins.
- Set up water bath: Place the ramekins in a deep baking dish and add hot water halfway up their sides to create a gentle cooking environment.
- Bake custard: Bake for 40–50 minutes, or until the custard is just set with a slight wobble in the center, indicating it is perfectly cooked.
- Cool and chill: Remove the ramekins from the water bath and allow them to cool completely, then refrigerate for at least 3 hours to fully set the custard.
- Serve: Run a knife around the edges of each ramekin and carefully invert onto serving plates to release the caramel custard.
Notes
- Avoid overheating the milk to prevent curdling and ensure a smooth custard.
- Straining the custard mixture helps create a silky texture by removing any cooked egg bits.
- Allow the custard to chill thoroughly before unmolding to maintain its shape.
- Store any leftovers covered in the refrigerator for up to 3 days.
