Description

Caramel Chex Mix is a deliciously sweet and crunchy snack made by coating Chex cereal with a rich homemade caramel sauce. This delightful treat is perfect for parties, holiday gatherings, or enjoying as a sweet snack with family and friends.

Ingredients

Main Ingredients

  • 6 cups Chex cereal (corn, rice, or wheat)
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Place Cereal in Bowl: Pour the 6 cups of Chex cereal into a large mixing bowl to make it ready for coating with caramel sauce.
  3. Prepare Caramel Sauce: In a medium saucepan over medium heat, melt 1/2 cup of unsalted butter together with 1 cup of brown sugar and 1/4 cup of light corn syrup. Stir continuously to blend the ingredients smoothly.
  4. Boil Caramel Mixture: Once the mixture begins to boil, let it boil for 2 minutes without stirring to develop a rich caramel flavor and proper consistency.
  5. Add Baking Soda and Vanilla: Remove the saucepan from heat and stir in 1/2 teaspoon baking soda and 1/2 teaspoon vanilla extract. The mixture will bubble up slightly, creating a light and airy caramel coating.
  6. Coat the Cereal: Immediately pour the warm caramel sauce over the cereal in the mixing bowl. Gently stir the mixture to coat the cereal evenly, making sure not to break the pieces.
  7. Spread on Baking Sheet: Spread the caramel-coated cereal mixture evenly onto the prepared baking sheet lined with parchment paper.
  8. Bake the Mix: Place the baking sheet in the preheated oven and bake for 45 minutes. Stir the mixture every 15 minutes to ensure even baking and prevent burning.
  9. Cool and Serve: After baking, remove the caramel Chex mix from the oven and let it cool completely on the baking sheet. Once cooled, break apart any large clusters and serve or store.

Notes

  • Add pretzels or peanuts for extra crunch and variety in texture.
  • Store the caramel Chex mix in an airtight container to keep it fresh for up to one week.
  • Break apart large clusters after cooling for easier snacking and portioning.
