Instructions
- Heat the olive oil: In a large soup pot over medium heat, warm 1 tablespoon of olive oil to prepare for sautéing the vegetables.
- Sauté the onion: Add the diced onion to the pot and cook for 4 to 5 minutes, stirring occasionally, until it becomes soft and translucent.
- Add the garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, taking care not to burn it.
- Add the vegetables: Incorporate the chopped cabbage, sliced carrots, sliced celery, and diced bell pepper into the pot. Cook for 5 minutes, stirring occasionally to combine flavors.
- Add tomatoes and broth: Pour in the canned diced tomatoes with their juices and the 6 cups of vegetable broth. Stir to combine.
- Season the soup: Add 1 teaspoon of Italian seasoning, ½ teaspoon of paprika, and season with salt and black pepper to taste. Stir well to distribute the seasonings throughout the soup.
- Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 25 to 30 minutes until all the vegetables are tender and flavors meld together.
- Garnish and serve: Remove the pot from heat, garnish with fresh chopped parsley, and serve the soup hot for a comforting, healthy meal.
