Description

A simple baked chicken dish topped with juicy tomatoes, garlic, basil, and melted mozzarella for all the fresh flavors of bruschetta in a hearty meal.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Topping

  • 2 cups diced tomatoes
  • 2 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • ¼ cup fresh basil, chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the chicken evenly.
  2. Season the chicken: Place the boneless, skinless chicken breasts in a baking dish and sprinkle them evenly with Italian seasoning, salt, and black pepper for balanced flavor.
  3. Prepare the tomato topping: In a bowl, mix together diced tomatoes, minced garlic, balsamic vinegar, olive oil, and chopped fresh basil to create a fresh, flavorful bruschetta-style topping.
  4. Add the topping to chicken: Spoon the prepared tomato mixture evenly over the seasoned chicken breasts, ensuring each piece is well covered.
  5. Bake the chicken: Place the baking dish in the oven and bake for 25 to 30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) to ensure it is fully cooked and safe to eat.
  6. Add the cheese: Remove the dish from the oven and sprinkle shredded mozzarella cheese over the top of the chicken and tomatoes.
  7. Melt the cheese: Return the dish to the oven and bake for an additional 5 minutes, until the mozzarella is nicely melted and bubbly.
  8. Rest and serve: Take the chicken bake out of the oven and let it rest for 5 minutes to allow the juices to redistribute, then serve warm with your choice of side.

Notes

  • Fresh mozzarella can be used instead of shredded mozzarella for a creamier texture.
  • Serve with rice, pasta, or a green salad to complement the dish and make a complete meal.
