Description

Crispy hasselback potatoes brushed with nutty brown butter and topped with sweet caramelized onions. This rich and elegant European side dish combines the textures of tender, crispy potatoes with the deep flavor of caramelized onions, perfect for elevating any meal.

Ingredients

Potatoes

  • 4 medium potatoes

Brown Butter

  • 4 tablespoons butter

Caramelized Onions

  • 2 onions, thinly sliced
  • 2 tablespoons olive oil

Seasoning

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it’s hot and ready for baking the potatoes.
  2. Prepare Potatoes: Slice each potato thinly, making sure not to cut all the way through; this creates the signature hasselback effect allowing the potatoes to crisp up beautifully yet stay intact.
  3. Make Brown Butter: Melt 4 tablespoons of butter in a pan over medium heat until it turns golden brown and emits a nutty aroma, careful not to burn it.
  4. Brush and Season: Brush the sliced potatoes generously with the brown butter, then sprinkle with salt and black pepper to enhance flavor.
  5. Bake Potatoes: Place the potatoes on a baking tray and bake in the preheated oven for 40–50 minutes, until the edges are crispy and the insides are tender. Baste occasionally with additional brown butter for extra crispiness if desired.
  6. Caramelize Onions: While potatoes are baking, heat 2 tablespoons of olive oil in a skillet over low heat. Add the thinly sliced onions and cook slowly for about 20-30 minutes, stirring frequently, until they are golden brown and caramelized.
  7. Assemble and Serve: Once the potatoes are done, top them with the sweet caramelized onions and serve immediately for a warm, flavorful side dish.

Notes

  • Use chopsticks or wooden spoons on either side of potatoes when slicing to avoid cutting all the way through.
  • Baste potatoes with extra brown butter during baking for enhanced crispiness and flavor.
  • Feel free to add toppings such as grated cheese or fresh herbs like thyme or rosemary to customize the dish.
