Description

Blueberry Baked Donuts are soft, fluffy donuts filled with fresh blueberries and baked instead of fried. They offer a lighter, healthier alternative to traditional fried donuts, perfect for a delightful breakfast or a sweet snack any time of the day.

Ingredients

Donuts

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh blueberries

Optional Glaze

  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a donut pan to prepare it for baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, beat together the milk, egg, melted butter, and vanilla extract until smooth and well mixed.
  4. Blend Wet and Dry: Pour the wet ingredient mixture into the dry ingredients, stirring gently until just combined to avoid overmixing.
  5. Fold in Blueberries: Carefully fold in the fresh blueberries into the batter, ensuring they are evenly distributed without breaking them.
  6. Fill Donut Pan: Spoon or pipe the batter evenly into the greased donut pan cavities, filling each about three-quarters full.
  7. Bake Donuts: Place the pan in the oven and bake for 12 to 15 minutes, until the donuts are lightly golden and a toothpick inserted comes out clean.
  8. Cool and Remove: Allow the donuts to cool slightly in the pan for a few minutes before carefully removing them to a wire rack to cool completely.
  9. Prepare Glaze (Optional): If desired, whisk together powdered sugar, milk, and vanilla extract to create a glaze. Drizzle over cooled donuts before serving.

Notes

  • Toss the blueberries in flour before adding them to the batter to help prevent them from sinking.
  • If fresh blueberries are not available, frozen blueberries can be used as a substitute.
  • Store baked donuts in an airtight container at room temperature for up to 2 days to maintain freshness.
