Description

This Blueberry & Peach Salsa is a deliciously sweet and tangy appetizer that combines ripe peaches, fresh blueberries, and a hint of jalapeño heat. Enhanced with lime juice and cilantro, this vibrant salsa is perfect to enjoy with crispy tortilla chips or as a flavorful topping for grilled meats, making it a refreshing and healthy choice for summer gatherings.

Ingredients

Fruits and Vegetables

  • 2 ripe peaches, diced
  • 1 cup fresh blueberries
  • 1/4 red onion, finely diced
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped

Flavorings

  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine fruits and veggies: Add the diced peaches, blueberries, finely diced red onion, seeded and chopped jalapeño, and chopped fresh cilantro to a medium mixing bowl.
  2. Prepare the dressing: In a small bowl, whisk together the fresh lime juice, honey (or maple syrup for a vegan option), salt, and black pepper until fully combined.
  3. Mix the salsa: Pour the prepared dressing over the fruit and vegetable mixture, then gently toss all ingredients until they are evenly coated and combined.
  4. Refrigerate to blend flavors: Place the salsa in the refrigerator for 15–20 minutes, allowing the flavors to meld beautifully and the salsa to chill.
  5. Serve: Serve the Blueberry & Peach Salsa chilled with tortilla chips as an appetizer or spoon it on top of grilled chicken, fish, or shrimp for an extra fresh, fruity flavor.

Notes

  • Choose ripe but firm peaches to ensure they hold their shape well in the salsa.
  • Adjust the amount of jalapeño to control the spice level according to your preference.
  • For added creaminess, mix in diced avocado just before serving.
  • This salsa is best enjoyed the same day it is made for the freshest flavor and texture.
