Ingredients
Strawberry Mixture

- 2 tablespoons water

Instructions
- Prepare and Cook Strawberries: Add the strawberries, sugar, maple syrup, and fresh lemon juice to a saucepan. Cook the mixture over medium heat for 5 to 7 minutes, until the strawberries soften and release their juices.
- Mash or Blend Strawberries: Once cooked, lightly mash the strawberries with a fork or blend until smooth, depending on your texture preference.
- Mix Cornstarch Slurry: In a small bowl, whisk together the cornstarch and water until smooth to create a slurry.
- Thicken Strawberry Mixture: Stir the cornstarch slurry into the hot strawberry mixture and continue cooking for 1 to 2 minutes, until it slightly thickens.
- Cool the Mixture: Remove the saucepan from heat and allow the strawberry mixture to cool completely.
- Add Coconut Milk and Vanilla: Stir in the full-fat coconut milk and vanilla extract thoroughly into the cooled mixture.
- Chill the Mixture: Refrigerate the combined mixture for at least 2 hours, ensuring it is thoroughly chilled before churning.
- Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Freeze for Firmness: Transfer the churned ice cream into a freezer-safe container and freeze for 2 to 4 hours to firm up.
- Serve: Before scooping, allow the ice cream to sit at room temperature for 5 to 10 minutes to soften slightly for easy serving.
