Description

Enjoy all the comforting flavors of traditional stuffed cabbage rolls in a simplified, hearty one-pot casserole. This beef cabbage roll casserole combines ground beef, cabbage, rice, and a rich tomato sauce baked together for an easy, comforting meal that’s perfect for family dinners.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small head cabbage, chopped
  • 1 onion, diced

Tomato and Rice

  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • ½ cup uncooked rice

Seasonings

  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Brown the Beef and Onion: In a large pot or skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onion is softened, about 5-7 minutes. Drain any excess fat if necessary.
  2. Add Tomato Sauce, Tomatoes, Rice, and Seasonings: Stir in the tomato sauce, diced tomatoes (with juices), uncooked rice, paprika, salt, and pepper. Mix well to combine all ingredients evenly.
  3. Incorporate the Cabbage: Add the chopped cabbage to the pot and gently fold it into the beef and tomato mixture until evenly distributed.
  4. Transfer and Bake: Pour the mixture into a baking dish, cover it tightly with foil or a lid, and bake in a preheated oven at 375 °F (190 °C) for 45 minutes, or until the rice is tender and the cabbage has softened.
  5. Serve: Remove from oven, let rest for a few minutes, then serve warm as a hearty main course.

Notes

  • Add a dash of vinegar to the casserole before baking for a subtle tangy finish that enhances the flavors.
  • Substitute ground turkey for the beef to create a lighter, lower fat version of the casserole.
  • Use gluten-free rice or quinoa for a gluten-free option if desired.
  • This casserole can be prepared ahead and refrigerated before baking to save time on busy days.
