Ingredients
Meat and Vegetables
- 1 lb ground beef
- 1 small head cabbage, chopped
- 1 onion, diced
Tomato and Rice
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) diced tomatoes
- ½ cup uncooked rice
Seasonings
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Brown the Beef and Onion: In a large pot or skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onion is softened, about 5-7 minutes. Drain any excess fat if necessary.
- Add Tomato Sauce, Tomatoes, Rice, and Seasonings: Stir in the tomato sauce, diced tomatoes (with juices), uncooked rice, paprika, salt, and pepper. Mix well to combine all ingredients evenly.
- Incorporate the Cabbage: Add the chopped cabbage to the pot and gently fold it into the beef and tomato mixture until evenly distributed.
- Transfer and Bake: Pour the mixture into a baking dish, cover it tightly with foil or a lid, and bake in a preheated oven at 375 °F (190 °C) for 45 minutes, or until the rice is tender and the cabbage has softened.
- Serve: Remove from oven, let rest for a few minutes, then serve warm as a hearty main course.
Notes
- Add a dash of vinegar to the casserole before baking for a subtle tangy finish that enhances the flavors.
- Substitute ground turkey for the beef to create a lighter, lower fat version of the casserole.
- Use gluten-free rice or quinoa for a gluten-free option if desired.
- This casserole can be prepared ahead and refrigerated before baking to save time on busy days.
