Description

This Beef and Mushroom Country Casserole is a creamy, nostalgic comfort dish combining ground beef, sautéed mushrooms, tender egg noodles, and cheddar cheese in a rich mushroom cream sauce. Baked until bubbly and golden, it’s a hearty and satisfying meal perfect for family dinners.

Ingredients

Beef and Vegetables

  • 1 lb ground beef
  • 1 cup mushrooms, sliced
  • 1 onion, diced

Pasta and Sauce

  • 2 cups cooked egg noodles
  • 1 can cream of mushroom soup (approx. 10.5 oz)
  • ½ cup sour cream

Topping

  • 1 cup cheddar cheese, shredded

Instructions

  1. Preheat the oven. Set your oven to 350 °F (175 °C) to prepare for baking the casserole later.
  2. Cook the beef and vegetables. In a large skillet over medium heat, cook the ground beef until it begins to brown. Add diced onion and sliced mushrooms, continuing to cook until the vegetables are softened and the beef is fully browned. Drain any excess fat.
  3. Combine with sauce and noodles. Stir in the can of cream of mushroom soup and sour cream, mixing until well combined. Add the cooked egg noodles and stir gently to coat everything evenly.
  4. Assemble the casserole. Transfer the beef and noodle mixture into a greased baking dish and spread it evenly. Sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake until bubbly. Place the dish in the preheated oven and bake for about 25 minutes or until the casserole is heated through and the cheese is melted and bubbly.

Notes

  • Add peas or spinach to the mixture for additional color and nutrition.
  • Use whole wheat egg noodles to increase fiber content.
  • Ensure to drain excess fat after browning the beef for a leaner casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated easily.
