Ingredients
Meat and Vegetables
- 1 lb (450g) ground beef
- 1 medium eggplant, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
Other Ingredients
- 2 cups tomato sauce
- 1 cup shredded cheese (such as mozzarella or cheddar)
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: 1 tsp oregano or basil
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the casserole.
- Prepare Eggplant: Lightly salt the eggplant slices and let them sit for 10 minutes to draw out bitterness and excess moisture, then pat them dry with paper towels.
- Sauté Aromatics: Heat the olive oil in a skillet over medium heat and sauté the chopped onion and minced garlic until they become soft and fragrant, about 3-5 minutes.
- Cook Beef: Add the ground beef to the skillet with onions and garlic, cooking until browned and cooked through with no pink remaining.
- Simmer Sauce: Stir in the tomato sauce along with salt, pepper, and optional herbs such as oregano or basil. Let the mixture simmer gently for 5 to 10 minutes to blend flavors.
- Assemble Casserole: In a baking dish, start by layering eggplant slices, then spread a layer of the beef and tomato sauce over them. Repeat layers until all ingredients are used, finishing with a generous topping of shredded cheese.
- Bake: Place the assembled casserole in the preheated oven and bake for 25–30 minutes or until the cheese is melted, bubbly, and slightly golden on top.
- Rest and Serve: Remove the casserole from the oven and let it rest for a few minutes before serving to allow the flavors to meld and the dish to set.
Notes
- Roasting the eggplant slices in advance can enhance their flavor and texture.
- Adding parmesan cheese on top provides extra richness and depth.
- For a spicier variation, consider adding red pepper flakes to the tomato sauce.
- This dish pairs well with a fresh green salad or crusty gluten-free bread.
