Ingredients
For the Salmon
- 4 salmon fillets, about 5–6 ounces each
- 2 tablespoons barbecue sauce
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For the Salad
- 6 cups mixed greens or chopped romaine
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- ½ red onion, thinly sliced
- 1 avocado, diced
- ½ cup black beans, drained and rinsed
- ¼ cup shredded cheddar cheese, optional
- 2 tablespoons chopped cilantro
For the Dressing
- ¼ cup barbecue sauce
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1–2 tablespoons water, as needed
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
- Prepare Salmon: Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet.
- Season Salmon: Brush each salmon fillet evenly with olive oil and barbecue sauce. Sprinkle with smoked paprika, garlic powder, salt, and black pepper to add smoky and savory flavors.
- Bake Salmon: Bake the salmon in the preheated oven for 10–14 minutes, depending on thickness, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Make Dressing: While the salmon bakes, whisk together barbecue sauce, olive oil, lime juice, honey, and Dijon mustard in a small bowl. Add 1–2 tablespoons water gradually to achieve your preferred dressing consistency.
- Assemble Salad: In a large bowl, combine the mixed greens, cherry tomatoes, corn, red onion, avocado, black beans, shredded cheddar cheese (if using), and chopped cilantro.
- Toss Salad: Pour half of the prepared dressing over the salad and toss gently to coat all ingredients evenly.
- Plate and Serve: Divide the salad onto plates or bowls. Place a baked salmon fillet on top of each serving, then drizzle with the remaining dressing. Serve immediately with optional fresh lime wedges for added zing.
Notes
- Use your favorite barbecue sauce; smoky or slightly spicy varieties work especially well to complement the salmon.
- For an extra smoky flavor, grill the salmon instead of baking it.
- Add cucumber, bell pepper, or crispy tortilla strips to the salad for additional texture and crunch.
- If preparing the salad ahead of time, keep the dressing separate to avoid sogginess.
- Store cooked salmon and salad separately in airtight containers in the refrigerator for up to 3 days.
