Description

This BBQ chicken and potato bake is a delightful and hearty casserole featuring succulent cubed chicken, tender baby potatoes, and a rich smoky barbecue sauce, all topped with melted cheddar cheese. Ideal for busy weeknights or family dinners, this dish is simple to prepare and packed with flavor.

Ingredients

Protein

  • 2 lbs (900g) boneless skinless chicken thighs or breasts, cubed

Vegetables

  • 1½ lbs (680g) baby potatoes, halved

Seasonings & Sauce

  • 1 cup (240ml) barbecue sauce
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

Dairy

  • 1 cup (100g) shredded cheddar cheese

Garnish

  • 2 tbsp chopped parsley

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the casserole.
  2. Prepare the Baking Dish: Grease a large baking dish thoroughly to prevent sticking and ensure easy cleanup.
  3. Toss the Potatoes: In a bowl, mix the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper, ensuring each piece is well coated.
  4. Arrange Potatoes: Spread the seasoned potatoes evenly in the prepared baking dish, forming the base layer.
  5. Coat the Chicken: In a separate bowl, toss the cubed chicken thighs or breasts with the barbecue sauce until fully coated.
  6. Layer the Chicken: Place the barbecue-coated chicken evenly over the bed of potatoes in the baking dish.
  7. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 35 minutes, allowing the chicken to cook and the potatoes to become tender.
  8. Add Cheese: Remove the foil carefully, then sprinkle shredded cheddar cheese evenly over the top of the chicken and potatoes.
  9. Finish Baking: Return the uncovered dish to the oven and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly, and the chicken is thoroughly cooked.
  10. Garnish and Serve: Once baked, remove from the oven and sprinkle chopped parsley over the casserole before serving to add freshness and color.
