Description

This BBQ chicken and potato bake is a comforting and flavorful casserole that combines juicy chicken thighs or breasts with tender baby potatoes, all smothered in smoky barbecue sauce and topped with melted cheddar cheese. It’s an effortless one-dish meal ideal for busy weeknights or family gatherings, delivering hearty American flavors with minimal prep.

Ingredients

Chicken

  • 2 lbs (900g) boneless skinless chicken thighs or breasts, cubed
  • 1 cup (240ml) barbecue sauce
  • 1 tsp salt
  • ½ tsp black pepper

Potatoes and Seasoning

  • 1½ lbs (680g) baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika

Toppings and Garnish

  • 1 cup (100g) shredded cheddar cheese
  • 2 tbsp chopped parsley

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (200°C). Lightly grease a large baking dish to prevent sticking and make cleanup easier.
  2. Season Potatoes: In a bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Arrange Potatoes: Spread the seasoned potatoes evenly in the prepared baking dish, creating a base layer.
  4. Coat Chicken: In a separate bowl, toss the cubed chicken pieces with the barbecue sauce until fully coated for a smoky, flavorful finish.
  5. Layer Chicken Over Potatoes: Spread the barbecue-coated chicken evenly over the potatoes in the baking dish.
  6. Bake Covered: Cover the dish tightly with aluminum foil and bake in the preheated oven for 35 minutes, allowing the potatoes to soften and the chicken to cook through.
  7. Add Cheese and Bake Uncovered: Remove the foil and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven and bake uncovered for an additional 10 to 15 minutes, until the cheese is melted and bubbly and the chicken is fully cooked.
  8. Garnish and Serve: Remove from oven, sprinkle with chopped parsley for a fresh finish, and serve hot straight from the dish.
