Ingredients
Cheese
- 1 block (8 oz) feta cheese
Vegetables
- 2 cups cherry tomatoes
- 1 red bell pepper, diced

- 2 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp red pepper flakes
- Salt and black pepper, to taste

- 4 large eggs
- Fresh basil or parsley, for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the dish.
- Arrange Feta and Vegetables: Place the block of feta cheese in the center of a baking dish. Surround it evenly with cherry tomatoes and diced red bell pepper.
- Season and Oil: Drizzle olive oil over the feta and vegetables, then sprinkle dried oregano, red pepper flakes, salt, and black pepper to season the mixture.
- Bake Initial Mixture: Bake the dish for 25 minutes until the tomatoes soften and the feta cheese becomes creamy in texture.
- Stir Gently: Remove the dish from the oven and gently stir the feta and vegetables to combine the flavors.
- Add Eggs: Create four small wells in the mixture, and carefully crack an egg into each well.
- Bake Eggs: Return the dish to the oven and bake for 8–10 minutes, or until the eggs reach your preferred level of doneness.
- Garnish and Serve: Remove from the oven, garnish with fresh basil or parsley, and serve immediately.
