Ingredients
Chicken and Seasoning
- 1 1/2 lbs boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Apricot Sauce
- 1/2 cup apricot preserves
- 1/4 cup low-sodium soy sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon smoked paprika
- 1/4 cup chicken broth
Thickening and Garnish
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, sliced
- 2 tablespoons fresh parsley or cilantro, chopped
- 2 tablespoons sliced almonds, optional
Instructions
- Season the Chicken: Pat the chicken dry and evenly season both sides with salt and black pepper to enhance its natural flavors.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place chicken in the skillet and sear for 3–4 minutes per side until golden brown, locking in juices and creating a flavorful crust.
- Prepare the Apricot Sauce: In a bowl, whisk together apricot preserves, low-sodium soy sauce, Dijon mustard, apple cider vinegar, minced garlic, grated ginger, smoked paprika, and chicken broth until smooth and well combined.
- Simmer the Chicken: Pour the apricot sauce over the seared chicken in the skillet. Lower heat to medium-low, cover, and let it simmer for 12–15 minutes, turning the chicken once halfway through, until fully cooked and tender.
- Thicken the Sauce: Mix cornstarch and water in a small bowl to create a slurry. Stir this into the skillet and cook uncovered for 1–2 minutes, gently stirring until the sauce thickens and becomes glossy.
- Garnish and Serve: Sprinkle sliced green onions, chopped fresh parsley or cilantro, and sliced almonds (if using) over the chicken. Serve hot with your choice of rice, roasted vegetables, or steamed broccoli for a complete meal.
Notes
- Chicken thighs provide extra juiciness, but chicken breasts are a great leaner alternative.
- If apricot preserves are too sweet, increase the vinegar or Dijon mustard by an extra teaspoon for better balance.
- Add 1/2 teaspoon red pepper flakes or a dash of sriracha for a spicy kick.
- For a gluten-free version, substitute soy sauce with tamari.
- Store any leftovers in the refrigerator for up to 4 days, reheating gently to preserve texture.
