Ingredients

For the Chicken:

For the Slaw:

  • 2 cups shredded cabbage
  • 1/2 apple, thinly sliced

  • 1 teaspoon honey
  • Salt and black pepper, to taste


Instructions

  1. Season the Chicken: In a bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice blend evenly over the chicken breasts or thighs to coat them thoroughly.
  2. Sear the Chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Once hot, add the seasoned chicken pieces and sear for 2–3 minutes on each side until they develop a nice, golden crust.
  3. Add Sauce Ingredients: Pour in the barbecue sauce, apple cider, apple cider vinegar, and sprinkle the brown sugar. Stir well to mix all the ingredients so the chicken is well coated with the flavorful sauce.
  4. Simmer: Reduce the heat to low and cover the skillet. Allow the chicken to cook gently for 20–25 minutes, stirring occasionally, until the chicken is cooked through and tender enough to shred easily.
  5. Shred the Chicken: Remove the cooked chicken from the skillet and shred it with two forks until the pieces are bite-sized and stringy.
  6. Combine and Cook with Apples: Return the shredded chicken to the skillet and stir in the finely diced apple and thinly sliced red onion. Cook for an additional 3–5 minutes to meld flavors and soften the onions slightly.
  7. Make the Slaw: In a mixing bowl, toss together shredded cabbage and thinly sliced apple. In a separate small bowl, whisk mayonnaise, apple cider vinegar, honey, salt, and black pepper to create the dressing. Pour the dressing over the cabbage and apple mixture and toss until evenly coated.
  8. Toast the Buns and Assemble: If desired, toast the brioche or hamburger buns lightly until golden. Spoon a generous amount of the warm pulled chicken onto each bun and top with a hearty portion of the apple slaw.
