Description

These Almond Cookies are crisp around the edges, soft in the center, and filled with rich almond flavor. They’re simple to make and perfect for holiday baking, afternoon tea, or everyday treats.

Ingredients

Dry Ingredients

  • 2 cups almond flour
  • ¼ cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • 1 large egg
  • ¼ cup unsalted butter, melted
  • 1 teaspoon almond extract
  • ½ teaspoon vanilla extract

Topping

  • Sliced almonds, for topping

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, all-purpose flour, sugar, baking powder, and salt until evenly combined.
  3. Add Wet Ingredients: Add the egg, melted butter, almond extract, and vanilla extract to the dry ingredients. Mix thoroughly until a smooth dough forms.
  4. Shape Cookies: Roll the dough into 1½-inch balls, then place them spaced apart on the prepared baking sheet.
  5. Top Cookies: Gently flatten each cookie slightly with your hand or the bottom of a glass, then press sliced almonds onto the tops for added texture and flavor.
  6. Bake: Bake in the preheated oven for 12 to 15 minutes, or until the edges are lightly golden and the cookies are set but still tender in the center.
  7. Cool: Remove from oven and allow the cookies to cool completely on the baking sheet before transferring or serving to ensure they firm up properly.

Notes

  • Do not overbake to maintain a tender center.
  • Store in an airtight container for up to one week to keep cookies fresh.
  • Dip half the cookies in melted dark chocolate for an extra indulgent treat.
