Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it is hot and ready for baking the potatoes.
- Bake Potatoes: Place whole potatoes directly on the oven rack or baking sheet and bake for 40–45 minutes, or until the potatoes are tender when pierced with a fork.
- Cool and Prepare Skins: Remove potatoes from the oven and let them cool slightly so they are safe to handle. Cut each potato in half lengthwise, then carefully scoop out some of the flesh from each half, leaving a thin layer to maintain the structure of the skins.
- Make Filling: In a bowl, mix the scooped potato flesh with Greek yogurt, shredded cheese, chopped green onions, salt, and pepper until well combined and creamy.
- Stuff Potato Skins: Spoon the filling mixture evenly back into the hollowed potato skins, ensuring the filling is well distributed.
- Bake Again: Place the stuffed potato skins on a baking sheet and bake for another 10–15 minutes, or until the tops are golden and the cheese is melted.
- Serve Warm: Remove from the oven and serve immediately while warm, optionally with extra Greek yogurt or your favorite sauce.
