Description

This Zesty Southwest Chicken Salad is a bold, flavor-packed meal made with tender chicken, black beans, corn, avocado, and a creamy chili-lime dressing. A healthy and satisfying dish that’s ready in under 30 minutes.


Ingredients

2 cups cooked chicken, shredded or diced

1 cup black beans, rinsed and drained

1 cup corn (frozen and thawed, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

For the Dressing

½ cup Greek yogurt

¼ cup mayonnaise

2 tbsp lime juice

1 tsp chili powder

½ tsp ground cumin

Salt and pepper to taste


Instructions

  1. Prepare the cooked chicken by shredding or dicing it.

  2. Chop all the vegetables and herbs: red bell pepper, tomatoes, avocado, red onion, and cilantro.

  3. In a small bowl, mix together Greek yogurt, mayo, lime juice, chili powder, cumin, salt, and pepper.

  4. In a large mixing bowl, combine chicken, beans, corn, chopped vegetables, and cilantro.

  5. Pour dressing over the salad and gently toss to coat.

  6. Chill for 30 minutes if desired. Serve cold.
