- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- ½ cup uncooked wild rice
- 4 cups vegetable or chicken broth

- ½ cup milk or cream (or coconut milk for vegan)
- Salt & pepper, to taste
Instructions
- Prepare the base: Heat the butter or olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and sliced mushrooms. Sauté for 5 to 6 minutes until the onions are translucent and the mushrooms have released their moisture and become tender.
- Add rice and broth: Stir in the uncooked wild rice, then pour in the vegetable or chicken broth. Add the thyme, and season with salt and pepper to taste. Bring the mixture to a gentle simmer.
- Simmer soup: Allow the soup to simmer gently for 40 to 45 minutes, or until the wild rice is fully cooked and tender. Stir occasionally to prevent sticking and ensure even cooking.
- Finish with cream: Reduce the heat to low and stir in the milk or cream (or coconut milk if vegan). Let the soup simmer for an additional 5 minutes to blend all the flavors and thicken slightly before serving.

- For a richer and more complex flavor, add a splash of sherry or white wine during the cooking process after sautéing the mushrooms.
