  • Salt & pepper, to taste


Instructions

  1. Prepare the base: Heat the butter or olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and sliced mushrooms. Sauté for 5 to 6 minutes until the onions are translucent and the mushrooms have released their moisture and become tender.
  2. Add rice and broth: Stir in the uncooked wild rice, then pour in the vegetable or chicken broth. Add the thyme, and season with salt and pepper to taste. Bring the mixture to a gentle simmer.
  3. Simmer soup: Allow the soup to simmer gently for 40 to 45 minutes, or until the wild rice is fully cooked and tender. Stir occasionally to prevent sticking and ensure even cooking.
  4. Finish with cream: Reduce the heat to low and stir in the milk or cream (or coconut milk if vegan). Let the soup simmer for an additional 5 minutes to blend all the flavors and thicken slightly before serving.
