Ingredients

For the Cookies:

1 cup salted butter, room temperature

1 cup light brown sugar

½ cup granulated sugar

1 large egg

¼ cup pumpkin puree (canned or fresh)

1 teaspoon vanilla extract

2 ½ cups all-purpose flour (or gluten-free flour blend)

1 teaspoon baking soda

1 box (3 oz) pumpkin spice instant pudding mix (optional)

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

¼ teaspoon salt

1 cup white chocolate chips (or dark/milk chocolate chips)

For the Topping:

2 tablespoons granulated sugar

1 teaspoon ground cinnamon


Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

  2. Mix Wet Ingredients:
    In a stand mixer, beat the butterbrown sugar, and granulated sugar until creamy. Add the egg, then mix in pumpkin puree and vanilla extract until combined.

  3. Combine Dry Ingredients:
    In a separate bowl, whisk together flourbaking sodapumpkin spice pudding mixcinnamonpumpkin pie spice, and salt.

  4. Combine Dough:
    Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in white chocolate chips.

  5. Shape Cookies:
    Using a cookie scoop, portion dough onto prepared baking sheets. Mix sugar and cinnamon for topping and sprinkle over each dough ball.

  6. Bake:
    Bake for 10 minutes, or until the edges are set but the centers remain soft. Cool on the baking sheets for a few minutes before transferring to a wire rack.
