Description

Watermelon Mochi is a refreshing, chewy, and visually stunning dessert that captures the flavors of summer. The natural sweetness of watermelon combined with the chewy texture of mochi creates a delightful treat that’s perfect for gatherings or just a special snack. Easy to make and light, this recipe is ideal for both beginners and seasoned mochi lovers.

Ingredients

1 ripe watermelon

230 g glutinous rice flour

65 g cornstarch

40 g sugar

300 g watermelon juice (blended from watermelon)

30 g butter

Cooked glutinous rice flour (for dusting)

Instructions

  1. Prepare the Watermelon:

    • Cut the watermelon in half, scoop out the flesh, and remove any seeds.

    • Blend the watermelon flesh until smooth to yield 300 g of watermelon juice.

  2. Make the Mochi Dough:

    • In a large bowl, mix the glutinous rice flour, cornstarch, and sugar.

    • Gradually add the watermelon juice to the dry ingredients, stirring continuously to combine. For a smoother texture, sift the mixture.

  3. Microwave the Mixture:

    • Cover the bowl with plastic wrap, poking small holes to allow steam to escape. Microwave on high for 5 minutes.

  4. Add Butter:

    • Stir in the butter while the mixture is still hot until fully melted and integrated.

    • Allow the dough to cool to room temperature, then knead for about 5 minutes until smooth and elastic.

  5. Chill the Dough:

    • Transfer the dough to a container lined with parchment paper, flatten the surface, and refrigerate for at least 3 hours to set.

  6. Shape the Mochi:

    • Dust the surface with cooked glutinous rice flour to prevent sticking. Cut the chilled dough into strips, then into bite-sized pieces

Notes

  • Add a Filling: Consider adding a piece of fresh fruit, like mango or strawberry, inside each piece of mochi for an extra surprise.
  • Make It Colorful: Experiment with mixing other fruit juices like strawberry, blueberry, or peach to create a variety of colorful mochi flavors.
  • Storage: Keep watermelon mochi in an airtight container in the fridge for up to 3-4 days. It’s best enjoyed chilled or at room temperature.
