Description

This Vibrant Bow Tie Pasta Salad is the perfect fresh, flavorful dish for any occasion. Packed with colorful vegetables, tender pasta, and a zesty pesto dressing, it’s ideal for a light lunch, side dish, or meal prep option. Quick to make and easily customizable, this salad will impress at your next BBQ, picnic, or potluck!

Ingredients

12 oz (4 cups) dry bow tie pasta

2 cups cherry tomatoes, halved

¼ cup red onion, diced

1 cup bocconcini cheese, halved

1 cup spinach, packed and finely chopped

½ cup basil, finely chopped

3 tbsp pesto

2 tbsp olive oil

½ lemon, juiced

Salt, to taste

Black pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the bow tie pasta according to package directions. Drain and toss with a little olive oil to prevent sticking. Let it cool to room temperature, or briefly run under cold water to speed up the process.

  2. Prepare the Dressing: In a small bowl, whisk together pesto, olive oil, and lemon juice. Set aside.

  3. Assemble the Salad: Combine the cooled pasta with cherry tomatoes, red onion, bocconcini cheese, spinach, and basil in a large bowl. Toss to mix.

  4. Add the Dressing: Pour the dressing over the salad, season with salt and black pepper, and toss gently until well-coated. Adjust the seasoning to taste. If the pesto is too thick, add more olive oil or lemon juice.

  5. Serve: Serve immediately, or refrigerate for up to 5 days for a make-ahead meal.

Notes

  • Add Protein: Include grilled chicken, shrimp, or chickpeas for a more filling meal.
  • Swap Cheese: Try mozzarella, feta, or goat cheese instead of bocconcini for a different flavor.
  • Vegan Version: Omit the cheese and use a dairy-free pesto for a vegan-friendly option.
