Description

Ingredients

15 oz canned chickpeas (drained and rinsed)

½ cup grated zucchini

½ cup grated carrot

¼ cup finely chopped onion

½ tbsp Italian seasoning

1 tsp sea salt

12 cloves garlic (minced or ½ tsp garlic powder)

Black pepper (to taste)

¼ tsp paprika

2 large eggs

1 tsp olive oil (or avocado oil), plus extra for cooking

½ cup oat flour (or breadcrumbs)


Instructions

  1. Prepare the Veggies:

    • Grate the zucchini and carrots. Place them in a clean dish towel or large paper towel, then squeeze out any excess moisture to prevent the mixture from becoming too watery.

  2. Mix the Ingredients:

    • Add the grated zucchini, carrots, chickpeas, and the remaining ingredients to a food processor. Pulse until the mixture is well combined but not overly processed. You want it to be firm enough to scoop but not pureed.

  3. Cook the Bites:

    • Heat oil in a large skillet over medium-high heat. Use a spoon or cookie scoop to form portions of the mixture and place them in the pan. Cook for 3-5 minutes on one side, flipping once golden and crispy. Press lightly with a spatula, cooking for another 3-5 minutes until both sides are golden.
