Ingredients
Noodles
- 8 ounces noodles (lo mein, rice noodles, or spaghetti)
Vegetables
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- ½ cup snap peas or green beans
Aromatics & Sauce
- 2 tablespoons vegetable oil or sesame oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce or hoisin sauce (optional)
- 1 teaspoon rice vinegar
- ½ teaspoon sugar
- ¼ teaspoon black pepper
Garnish
- Green onions, sliced (optional)
Instructions
- Cook Noodles: Cook the noodles according to the package directions until al dente. Drain the noodles well and set them aside to prevent sticking.
- Heat Oil: In a large skillet or wok, heat 2 tablespoons of vegetable or sesame oil over medium-high heat to prepare for stir-frying the vegetables.
- Cook Vegetables: Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas or green beans to the skillet. Stir-fry these vegetables for 4 to 5 minutes until they become crisp-tender but still retain some bite and vibrant color.
- Add Aromatics: Stir in the minced garlic and grated fresh ginger. Cook them together with the vegetables for about 30 seconds until fragrant and aromatic.
- Prepare Sauce: In a small bowl, combine the soy sauce, oyster or hoisin sauce (if using), rice vinegar, sugar, and black pepper. Mix well to blend the flavors.
- Combine Noodles and Sauce: Add the cooked noodles into the skillet with the vegetables. Pour the prepared sauce over the noodles and vegetables.
- Toss and Heat Through: Toss everything together thoroughly and stir-fry for an additional 2 to 3 minutes to ensure the noodles are heated and evenly coated with the sauce.
- Serve and Garnish: Remove the skillet from heat. Garnish the stir-fry with sliced green onions if desired, then serve immediately while hot.
