Description

Vegetable Stir-Fry with Noodles is a vibrant, quick, and easy-to-make dish featuring tender noodles tossed with crisp, colorful vegetables and a savory, tangy sauce. Ideal for busy weeknights, this recipe is versatile and can be customized with your choice of vegetables and proteins for a delicious, healthy meal.

Ingredients

Noodles

  • 8 ounces noodles (lo mein, rice noodles, or spaghetti)

Vegetables

  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • ½ cup snap peas or green beans

Aromatics & Sauce

  • 2 tablespoons vegetable oil or sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce or hoisin sauce (optional)
  • 1 teaspoon rice vinegar
  • ½ teaspoon sugar
  • ¼ teaspoon black pepper

Garnish

  • Green onions, sliced (optional)

Instructions

  1. Cook Noodles: Cook the noodles according to the package directions until al dente. Drain the noodles well and set them aside to prevent sticking.
  2. Heat Oil: In a large skillet or wok, heat 2 tablespoons of vegetable or sesame oil over medium-high heat to prepare for stir-frying the vegetables.
  3. Cook Vegetables: Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas or green beans to the skillet. Stir-fry these vegetables for 4 to 5 minutes until they become crisp-tender but still retain some bite and vibrant color.
  4. Add Aromatics: Stir in the minced garlic and grated fresh ginger. Cook them together with the vegetables for about 30 seconds until fragrant and aromatic.
  5. Prepare Sauce: In a small bowl, combine the soy sauce, oyster or hoisin sauce (if using), rice vinegar, sugar, and black pepper. Mix well to blend the flavors.
  6. Combine Noodles and Sauce: Add the cooked noodles into the skillet with the vegetables. Pour the prepared sauce over the noodles and vegetables.
  7. Toss and Heat Through: Toss everything together thoroughly and stir-fry for an additional 2 to 3 minutes to ensure the noodles are heated and evenly coated with the sauce.
  8. Serve and Garnish: Remove the skillet from heat. Garnish the stir-fry with sliced green onions if desired, then serve immediately while hot.

Notes

  • You can use any vegetables you prefer such as mushrooms, cabbage, or zucchini to suit your taste and availability.
  • For additional protein, consider adding tofu, chicken, or shrimp to the stir-fry.
  • Feel free to adjust the sauce quantities to suit your preferred taste—more soy sauce for saltiness, more sugar for sweetness.
  • Leftovers can be refrigerated and stored in an airtight container for up to 3 days; reheat thoroughly before serving.
