Description
A creamy and refreshing vegan peppermint hot chocolate made with rich cocoa, plant-based milk, and a hint of peppermint extract, topped optionally with crushed candy canes for an extra festive touch.
Ingredients
Liquid Base
- 2 cups almond or oat milk
Cocoa Mixture
- 2 tbsp cocoa powder
- 2–3 tbsp sugar or maple syrup
- 1/4 cup dairy-free chocolate chips
Flavoring
- 1/4 tsp peppermint extract
- Optional: crushed candy canes
Instructions
- Heat the Plant Milk: Pour the almond or oat milk into a saucepan and heat over medium heat until warm but not boiling, preparing a smooth base for the hot chocolate.
- Mix Cocoa and Sweetener: Whisk in the cocoa powder and sugar or maple syrup thoroughly until the mixture is smooth and the cocoa has dissolved completely.
- Melt the Chocolate Chips: Stir in the dairy-free chocolate chips and continue stirring until they have fully melted, creating a rich and velvety texture.
- Add Peppermint Extract: Remove from heat and add the peppermint extract, stirring well. Be careful with the amount as peppermint extract can be very strong.
- Serve and Garnish: Pour the hot chocolate into cups and optionally top with crushed candy canes or coconut whipped cream for extra flair and flavor.
Notes
- Add the peppermint extract cautiously; it has a strong flavor and can easily overpower the drink.
- For an indulgent topping, add a dollop of coconut whipped cream to keep it vegan and creamy.
- Use maple syrup instead of sugar for a healthier natural sweetener option.
- Adjust the cocoa powder quantity if you prefer a more intense chocolate flavor.
