Description

Vegan Blueberry Donuts are fluffy, moist, and bursting with fresh blueberries. Made with simple, plant-based ingredients, these donuts are a healthier, baked version of a classic treat. Perfect for breakfast, brunch, or a sweet snack, they’re as delicious as they are easy to make!

Ingredients

Dry Ingredients:

  • 1 1/2 cups all-purpose flour (or whole wheat flour for a healthier option)
  • 1/2 cup granulated sugar (or coconut sugar for a more natural option)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Wet Ingredients:

  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar (to help activate the baking powder)

Additional:

  • 1/2 cup fresh or frozen blueberries (do not thaw if using frozen blueberries)
  • 1/2 cup powdered sugar
  • 12 teaspoons almond milk (or plant-based milk of choice)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven and prep pan: Preheat oven to 350°F (175°C) and grease a donut pan.
  2. Mix dry ingredients: Combine flour, sugar, baking powder, salt, and cinnamon in a bowl.
  3. Combine wet ingredients: In another bowl, mix almond milk, oil, vanilla extract, and apple cider vinegar.
  4. Combine wet and dry: Gently mix wet ingredients into dry until just combined.
  5. Add blueberries: Fold blueberries into batter.
  6. Fill donut pan: Spoon batter into pan, filling 3/4 full.
  7. Bake: Bake for 12-15 minutes until golden brown.
  8. Cool and glaze: Let donuts cool, then glaze with powdered sugar, almond milk, and vanilla extract mixture.
  9. Serve: Enjoy your delicious Vegan Blueberry Donuts!

Notes

  • For extra flavor, add lemon zest to the batter.
  • If you don’t have a donut pan, you can use a muffin tin to make donut holes or mini cakes.
  • Skip the glaze for a less sweet option or use powdered sugar for a simple dusting.
