Ingredients
Steak
- 2 ribeye or filet mignon steaks (1–1½ inches thick)
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt, to taste
- Black pepper, to taste
Creamy Garlic Sauce
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup beef broth
- ½ teaspoon Italian seasoning
- ¼ teaspoon paprika
- ¼ cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring Steaks to Room Temperature: Remove steaks from the refrigerator 20–30 minutes before cooking to ensure even cooking and better searing.
- Season Steaks: Pat the steaks dry with paper towels and season generously on both sides with salt and black pepper for enhanced flavor.
- Preheat Skillet: Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
- Sear Steaks: Add the steaks to the pan and sear for 3–5 minutes per side, depending on thickness and your preference for doneness, forming a beautiful crust.
- Butter Baste: Add 1 tablespoon butter to the skillet and spoon the melted butter repeatedly over the steaks for about 30 seconds to add richness.
- Rest Steaks: Remove the steaks from the skillet and set them aside to rest, allowing juices to redistribute.
- Make Garlic Sauce: In the same skillet, melt 1 tablespoon butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant without browning.
- Deglaze Pan: Pour in beef broth, scraping up the flavorful browned bits from the bottom of the skillet to deepen the sauce’s flavor.
- Add Cream and Seasonings: Stir in heavy cream, Italian seasoning, and paprika. Let the sauce simmer gently for 3–5 minutes, stirring occasionally, until it thickens slightly.
- Incorporate Cheese: Add grated Parmesan cheese and stir until the sauce is smooth and creamy.
- Adjust Seasoning: Taste the sauce and season with salt and pepper as needed.
- Finish and Serve: Return the steaks to the skillet and spoon the creamy garlic sauce over the top. Garnish with chopped fresh parsley and serve immediately for a luscious, comforting meal.
Notes
- For extra depth of flavor, add a splash of white wine to the pan before adding the cream.
- Filet mignon, ribeye, or New York strip steaks all work excellently with this recipe.
- Serve alongside mashed potatoes, roasted asparagus, or garlic green beans for a complete dinner.
- The sauce will thicken as it cools; if it becomes too thick, stir in a splash of additional cream to loosen it.
