Ingredients
Potatoes and Garlic
- 3 lbs Yukon Gold potatoes, peeled and cubed
- 1 whole head garlic
Other Ingredients
- 2 tbsp olive oil
- ½ cup unsalted butter
- ¾–1 cup heavy cream (or whole milk)
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- ¼ tsp white pepper (optional)
- 2 tbsp sour cream or cream cheese (optional, extra creamy)
- Fresh chives or parsley, chopped (optional)
Instructions
- Roast the Garlic: Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
- Boil the Potatoes: Meanwhile, place peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15–18 minutes, until fork-tender.
- Drain and Mash: Drain potatoes well and return to the pot. Squeeze the roasted garlic cloves into the potatoes. Add butter and mash until melted and well combined.
- Add Cream and Season: Slowly stir in heavy cream until the mixture is smooth and fluffy. Mix in sour cream or cream cheese if using for extra creaminess.
- Final Seasoning and Garnish: Season with salt, black pepper, and white pepper if desired. Garnish with chopped fresh chives or parsley and serve hot.

- Yukon Golds give the creamiest texture for mashed potatoes.
- Warming the cream before adding improves the texture and consistency.
- The dish can be made ahead and gently reheated with extra cream to restore creaminess.
