Ingredients

Potatoes and Garlic

  • 3 lbs Yukon Gold potatoes, peeled and cubed
  • 1 whole head garlic

Other Ingredients

  • 2 tbsp olive oil
  • ½ cup unsalted butter
  • ¾1 cup heavy cream (or whole milk)
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp white pepper (optional)
  • 2 tbsp sour cream or cream cheese (optional, extra creamy)
  • Fresh chives or parsley, chopped (optional)


Instructions

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
  2. Boil the Potatoes: Meanwhile, place peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15–18 minutes, until fork-tender.
  3. Drain and Mash: Drain potatoes well and return to the pot. Squeeze the roasted garlic cloves into the potatoes. Add butter and mash until melted and well combined.
  4. Add Cream and Season: Slowly stir in heavy cream until the mixture is smooth and fluffy. Mix in sour cream or cream cheese if using for extra creaminess.
  5. Final Seasoning and Garnish: Season with salt, black pepper, and white pepper if desired. Garnish with chopped fresh chives or parsley and serve hot.
