Description

A rustic and hearty Tuscan-style soup brimming with chickpeas, tomatoes, fresh herbs, and vegetables. This vibrant Mediterranean-inspired dish is simple to prepare, nourishing, and perfect for a comforting meal any time of year.

Ingredients

Vegetables and Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • Fresh spinach or kale (optional)
  • Fresh parsley for garnish

Pantry Items

  • 1 tablespoon olive oil
  • 1 can (15 oz) chickpeas, drained
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil: Warm the olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté aromatics and vegetables: Add the chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook, stirring occasionally, for about 5 minutes, until the vegetables are softened and fragrant.
  3. Add main ingredients and seasonings: Stir in the drained chickpeas and diced tomatoes, followed by the vegetable broth. Sprinkle in rosemary, thyme, salt, and pepper to taste. Mix well to combine all flavors.
  4. Simmer the soup: Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 20 to 25 minutes, allowing the flavors to meld and the vegetables to fully cook.
  5. Incorporate greens: If using, stir in fresh spinach or kale leaves during the last 5 minutes of cooking to wilt them slightly and add extra nutrients.
  6. Garnish and serve: Remove the soup from heat, garnish with fresh parsley, and serve warm. Optionally, blend partially for a creamier texture or add pasta/potatoes for extra heartiness before serving.

Notes

  • For a creamier texture, partially blend the soup using an immersion blender or in batches with a regular blender.
  • Add small pasta shapes like ditalini or some diced potatoes for a more filling meal.
  • This soup keeps well in the refrigerator for up to 3 days and also freezes nicely.
  • Adjust herb quantities according to your taste preference.
  • Gluten-free and vegan as written; double check broth brand to ensure compliance.
