Description
A rustic and hearty Tuscan-style soup brimming with chickpeas, tomatoes, fresh herbs, and vegetables. This vibrant Mediterranean-inspired dish is simple to prepare, nourishing, and perfect for a comforting meal any time of year.
Ingredients
Vegetables and Aromatics
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- Fresh spinach or kale (optional)
- Fresh parsley for garnish
Pantry Items
- 1 tablespoon olive oil
- 1 can (15 oz) chickpeas, drained
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon rosemary
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil: Warm the olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté aromatics and vegetables: Add the chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook, stirring occasionally, for about 5 minutes, until the vegetables are softened and fragrant.
- Add main ingredients and seasonings: Stir in the drained chickpeas and diced tomatoes, followed by the vegetable broth. Sprinkle in rosemary, thyme, salt, and pepper to taste. Mix well to combine all flavors.
- Simmer the soup: Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 20 to 25 minutes, allowing the flavors to meld and the vegetables to fully cook.
- Incorporate greens: If using, stir in fresh spinach or kale leaves during the last 5 minutes of cooking to wilt them slightly and add extra nutrients.
- Garnish and serve: Remove the soup from heat, garnish with fresh parsley, and serve warm. Optionally, blend partially for a creamier texture or add pasta/potatoes for extra heartiness before serving.
Notes
- For a creamier texture, partially blend the soup using an immersion blender or in batches with a regular blender.
- Add small pasta shapes like ditalini or some diced potatoes for a more filling meal.
- This soup keeps well in the refrigerator for up to 3 days and also freezes nicely.
- Adjust herb quantities according to your taste preference.
