Ingredients
For the Onion Herb Mixture:
1 ½ cups white onion (medium), diced
½ cup flat-leaf parsley, chopped fine
¼ cup mint leaves, chopped fine
½ teaspoon paprika
½ teaspoon sumac
¼ teaspoon kosher salt
For the Beef:
1 lb beef top round, diced small (or flank steak)
1 tablespoon vegetable oil
½ teaspoon paprika
½ teaspoon sumac
½ teaspoon ground cumin
½ teaspoon cayenne powder
½ teaspoon urfa biber (smoked red pepper – optional)
½ teaspoon kosher salt
1 tablespoon butter
¼ cup water
For Assembly:
Lavash (or flatbreads, tortillas, or pita)
Tomatoes, chopped
Instructions
Step 1: Prepare the Onion Herb Mixture

In a bowl, combine the diced onion, parsley, mint, paprika, sumac, and kosher salt. Mix well and set aside to allow the flavors to meld.
Step 2: Season the Beef

Trim any excess fat from the beef top round and dice into small pieces or strips.

In a bowl, mix the beef with vegetable oil, paprika, sumac, ground cumin, cayenne powder, urfa biber (if using), and kosher salt. Ensure the beef is evenly coated with the spices.
Step 3: Cook the Beef

Heat a skillet over medium-high heat and melt the butter.

Add the seasoned beef to the skillet and stir-fry for several minutes until the beef is browned and no longer pink.

Add water to the skillet, then place a piece of lavash or flatbread on top of the beef to steam. Allow the water to evaporate, letting the meat sizzle for 2-3 minutes while the bread crisps slightly.
Step 4: Assemble the Tantuni

Remove the bread from the skillet and place it on a clean surface, top side down.

Add a few tablespoons of the onion herb mixture, followed by a row of chopped tomatoes.

Top with the cooked beef and then roll the bread tightly around the filling.

Cut the wrap in half and serve immediately.
