Description

A rich and creamy Thai-inspired dish featuring tender chicken coated in a flavorful peanut sauce with a perfect balance of sweet, savory, and slightly spicy notes.

Ingredients

Chicken

  • 500 g chicken breast (sliced)
  • 1 tablespoon oil

Peanut Sauce

  • 1/2 cup peanut butter
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)

Instructions

  1. Heat the oil and cook chicken: Heat 1 tablespoon of oil in a pan over medium heat, then add the sliced chicken breast. Cook until the chicken is lightly browned on all sides, approximately 5-7 minutes.
  2. Sauté garlic and ginger: Add the minced garlic and grated ginger to the pan with the chicken. Sauté briefly for about 1-2 minutes until fragrant, stirring constantly to avoid burning.
  3. Prepare the peanut sauce: In a mixing bowl, combine 1/2 cup peanut butter, 1/2 cup coconut milk, 2 tablespoons soy sauce, 1 tablespoon lime juice, and 1 tablespoon brown sugar. Stir thoroughly until the sauce is smooth and well blended.
  4. Add sauce to the pan: Pour the prepared peanut sauce mixture into the pan with the chicken and stir well to coat the chicken pieces evenly with the sauce.
  5. Simmer until thickened and cooked: Reduce heat to low and let the chicken simmer in the peanut sauce for about 8-10 minutes, stirring occasionally, until the sauce thickens to desired consistency and the chicken is fully cooked.
  6. Serve: Serve the Thai peanut chicken hot, ideally with steamed rice or noodles to soak up the delicious sauce.

Notes

  • Add chili paste for extra heat if desired.
  • Garnish with crushed peanuts and fresh cilantro for added texture and flavor.
  • Adjust the sauce thickness by adding a little water if it becomes too thick during cooking.
