- 500 g chicken breast (sliced)
- 1 tablespoon oil
Peanut Sauce
- 1/2 cup peanut butter
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 2 cloves garlic (minced)
- 1 teaspoon ginger (grated)
Instructions
- Heat the oil and cook chicken: Heat 1 tablespoon of oil in a pan over medium heat, then add the sliced chicken breast. Cook until the chicken is lightly browned on all sides, approximately 5-7 minutes.
- Sauté garlic and ginger: Add the minced garlic and grated ginger to the pan with the chicken. Sauté briefly for about 1-2 minutes until fragrant, stirring constantly to avoid burning.
- Prepare the peanut sauce: In a mixing bowl, combine 1/2 cup peanut butter, 1/2 cup coconut milk, 2 tablespoons soy sauce, 1 tablespoon lime juice, and 1 tablespoon brown sugar. Stir thoroughly until the sauce is smooth and well blended.
- Add sauce to the pan: Pour the prepared peanut sauce mixture into the pan with the chicken and stir well to coat the chicken pieces evenly with the sauce.
- Simmer until thickened and cooked: Reduce heat to low and let the chicken simmer in the peanut sauce for about 8-10 minutes, stirring occasionally, until the sauce thickens to desired consistency and the chicken is fully cooked.
- Serve: Serve the Thai peanut chicken hot, ideally with steamed rice or noodles to soak up the delicious sauce.
