Ingredients
Tenderloin
- 2 lb beef tenderloin
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Sauce
- 4 oz cream cheese, softened
- 2 tbsp prepared horseradish
- 1 tbsp sour cream
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions
- Preheat and Prepare: Preheat the oven to 425 °F (220 °C). Rub the beef tenderloin with olive oil, salt, and black pepper to season evenly.
- Roast the Tenderloin: Place the seasoned tenderloin in the oven and roast for 25 to 30 minutes until the internal temperature reaches 135 °F for medium-rare doneness. Remove from oven and let rest for 10 minutes to allow juices to redistribute.
- Make the Sauce: In a bowl, mix the softened cream cheese, prepared horseradish, sour cream, and Dijon mustard until smooth. Season with salt and pepper to taste.
- Serve: Slice the rested tenderloin into portions and serve alongside the horseradish cream cheese sauce.

- The horseradish cream sauce can be made up to 2 days ahead of time and stored refrigerated.
