Description

Perfectly roasted beef tenderloin paired with a zesty horseradish-cream-cheese sauce — elegant, rich, and surprisingly easy, making it an ideal dinner or holiday main dish.

Ingredients

Tenderloin

  • 2 lb beef tenderloin
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Sauce

  • 4 oz cream cheese, softened
  • 2 tbsp prepared horseradish
  • 1 tbsp sour cream
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Preheat and Prepare: Preheat the oven to 425 °F (220 °C). Rub the beef tenderloin with olive oil, salt, and black pepper to season evenly.
  2. Roast the Tenderloin: Place the seasoned tenderloin in the oven and roast for 25 to 30 minutes until the internal temperature reaches 135 °F for medium-rare doneness. Remove from oven and let rest for 10 minutes to allow juices to redistribute.
  3. Make the Sauce: In a bowl, mix the softened cream cheese, prepared horseradish, sour cream, and Dijon mustard until smooth. Season with salt and pepper to taste.
  4. Serve: Slice the rested tenderloin into portions and serve alongside the horseradish cream cheese sauce.

Notes

  • The horseradish cream sauce can be made up to 2 days ahead of time and stored refrigerated.
  • Allowing the beef to rest before slicing helps retain its natural juices, ensuring a tender and flavorful experience.
