  • 1/4 cup chopped nuts or oats


Instructions

  1. Preheat and Prepare: Preheat your oven to 180°C (350°F) and thoroughly grease a loaf pan to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, and ground ginger, mixing well to evenly distribute the spices and leavening agents.
  3. Mix Wet Ingredients: In a separate larger bowl, whisk together the eggs, sugar, vegetable oil, and milk until the mixture is smooth and homogenous.
  4. Combine Ingredients: Gradually add the dry ingredients into the wet ingredients, stirring gently. After the batter is combined, fold in the grated carrots carefully to maintain the batter’s texture.
  5. Layer Batter and Swirl: Pour half of the batter into the prepared loaf pan. Evenly sprinkle half of the swirl mixture (brown sugar, ground ginger, chopped nuts or oats) over the batter. Repeat with the remaining batter and swirl mixture to create defined layers.
  6. Bake the Bread: Place the loaf pan in the preheated oven and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean and the bread is set.
