Ingredients

For the Sweet Potato Rounds:

2 medium sweet potatoes, sliced into 1/4-inch rounds

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon ground cinnamon (optional)

For the Topping:

4 oz goat cheese, crumbled

1 tablespoon honey (optional)

1 tablespoon fresh thyme or rosemary, finely chopped

1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Slice sweet potatoes into 1/4-inch rounds and place on a parchment-lined baking sheet.

  3. Drizzle with olive oil and season with salt, pepper, and cinnamon. Toss to coat.

  4. Roast for 25–30 minutes, flipping halfway, until tender and golden.

  5. Cool slightly, then top each round with goat cheese.

  6. Drizzle with honey and balsamic glaze (if using).

  7. Sprinkle with fresh herbs. Serve warm.

Notes

  • Choose similar-sized sweet potatoes for even baking.
  • Use a piping bag for neater goat cheese presentation.
  • Add a sprinkle of smoked paprika for extra flavor.
  • These can be served at room temp, but are best warm.
  • Pair with a chilled white wine or sparkling cider for a perfect combo.
