Ingredients
4 medium zucchini, halved lengthwise
1 tablespoon olive oil
1/2 cup onion, finely chopped
2 cloves garlic, minced
1/2 pound ground beef or turkey
1 tomato, diced
1/2 cup cooked rice or breadcrumbs
1 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup grated Parmesan cheese
1/2 cup mozzarella cheese, shredded
Instructions

Preheat oven: 375°F (190°C). Line a baking dish.

Prepare zucchini: Scoop out the insides to create boats, leaving ~1/4 inch of flesh. Chop scooped-out flesh and set aside.

Cook filling: In a skillet, heat olive oil. Sauté onion and garlic until softened. Add ground meat and zucchini flesh, cooking until meat is browned.

Add flavor: Stir in diced tomatoes, rice or breadcrumbs, Italian seasoning, salt, and pepper. Cook 2–3 minutes.

Fill zucchini: Spoon mixture into zucchini boats, packing tightly. Place in the baking dish.

Top with cheese: Sprinkle Parmesan and mozzarella evenly over each boat.

Bake: 25–30 minutes until zucchini is tender and cheese is melted & golden.

Serve: Let cool slightly, garnish with parsley or basil, and enjoy!
