Description

Ingredients

Fruit

  • 1 cup strawberries, chopped
  • 1 cup rhubarb, chopped

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar

Wet Ingredients

  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract


Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners or grease it lightly to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to combine and aerate the mixture evenly.
  3. Whisk Wet Ingredients: In a separate bowl, beat the egg, then add sugar, milk, vegetable oil, and vanilla extract. Whisk until well combined and smooth.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredient mixture into the bowl with dry ingredients. Stir gently just until combined; avoid overmixing to keep muffins tender.
  5. Fold in Fruit: Toss the chopped strawberries and rhubarb in a small amount of flour (optional but recommended) to prevent them from sinking, then fold them carefully into the batter.
  6. Fill Muffin Cups: Divide the batter evenly into the prepared muffin tin cups, filling each about 3/4 full to allow space for rising.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes, or until muffins are golden on top and a toothpick inserted into the center comes out clean.
