Ingredients

For the Rolls:

1/2 cup heavy whipping cream, whipped to stiff peaks

1 cup fresh strawberries, diced

For the Shortcake Crumb Topping:

1 cup crushed vanilla wafers or shortbread cookies

2 tablespoons unsalted butter, melted

2 tablespoons strawberry gelatin powder

For Assembly:

68 large flour tortillas


Instructions

  1. Prepare the Cheesecake Filling:
