All the cozy flavors of classic lasagna in a hearty, one-pot soup! This Stovetop Lasagna Soup features rich tomatoes, Italian seasoning, tender pasta, and a creamy ricotta topping for an effortless, comforting meal.
Ingredients
Soup:
- 1 lb ground beef or Italian sausage
- 1 tbsp olive oil (if needed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp Italian seasoning
- 1 tsp dried basil
- ½ tsp dried oregano
- ½ tsp salt (to taste)
- ¼ tsp crushed red pepper flakes (optional)
- 4 cups chicken or vegetable broth
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 8–10 lasagna noodles, broken into pieces
Ricotta Topping:
- 1 cup ricotta cheese
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 1 tsp dried parsley or basil

Instructions
- Brown the Meat: Heat a large pot over medium heat and cook the ground beef or Italian sausage until browned. Drain excess grease if necessary to reduce fat.
- Sauté Aromatics: Add diced onion to the pot and cook for 3–4 minutes until softened. Stir in minced garlic and cook for an additional 1 minute to release aroma.
- Add Seasonings: Stir in tomato paste, Italian seasoning, dried basil, dried oregano, salt, and crushed red pepper flakes (optional). Cook for 1 minute to bloom the spices and intensify their flavor.
- Add Liquids and Tomatoes: Pour in chicken or vegetable broth along with the crushed and diced tomatoes. Stir to combine all ingredients evenly.
- Add Pasta and Boil: Add broken lasagna noodles to the pot and bring the mixture to a boil over medium-high heat.
- Simmer Soup: Reduce the heat to low and simmer for 12–15 minutes, stirring occasionally, until the noodles are tender and the flavors have melded.
- Prepare Ricotta Topping: While the soup simmers, mix ricotta cheese, shredded mozzarella, grated Parmesan, and dried parsley or basil in a small bowl until combined and creamy.
- Serve: Ladle the hot soup into bowls and top each with a generous scoop of the ricotta mixture. Garnish with fresh basil, extra Parmesan, and cracked black pepper if desired.
