Ingredients

Soup:

  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp salt (to taste)
  • ¼ tsp crushed red pepper flakes (optional)
  • 4 cups chicken or vegetable broth
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • 810 lasagna noodles, broken into pieces

Ricotta Topping:

  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 1 tsp dried parsley or basil

Instructions

  1. Brown the Meat: Heat a large pot over medium heat and cook the ground beef or Italian sausage until browned. Drain excess grease if necessary to reduce fat.
  2. Sauté Aromatics: Add diced onion to the pot and cook for 3–4 minutes until softened. Stir in minced garlic and cook for an additional 1 minute to release aroma.
  3. Add Seasonings: Stir in tomato paste, Italian seasoning, dried basil, dried oregano, salt, and crushed red pepper flakes (optional). Cook for 1 minute to bloom the spices and intensify their flavor.
  4. Add Liquids and Tomatoes: Pour in chicken or vegetable broth along with the crushed and diced tomatoes. Stir to combine all ingredients evenly.
  5. Add Pasta and Boil: Add broken lasagna noodles to the pot and bring the mixture to a boil over medium-high heat.
  6. Simmer Soup: Reduce the heat to low and simmer for 12–15 minutes, stirring occasionally, until the noodles are tender and the flavors have melded.
