Description

A creamy and comforting spinach chicken casserole featuring tender cooked chicken, fresh sautéed spinach, rich cream cheese, tangy sour cream, and melted mozzarella cheese. This easy-to-make baked dish delivers satisfying flavors and gooey texture, perfect for a cozy family dinner or meal prep.

Ingredients

Chicken and Vegetables

  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups fresh spinach
  • 2 cloves garlic (minced)

Dairy and Seasonings

  • 4 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F) to prepare for baking the casserole.
  2. Sauté spinach and garlic: In a pan over medium heat, cook the minced garlic until fragrant, then add the fresh spinach and sauté until wilted and tender. Remove from heat.
  3. Mix creamy base: In a mixing bowl, combine the softened cream cheese, sour cream, Italian seasoning, salt, and pepper. Stir thoroughly to create a smooth, seasoned cream base.
  4. Combine main ingredients: Add the cooked chicken and sautéed spinach with garlic into the bowl with the cream cheese mixture. Mix well until all ingredients are evenly incorporated.
  5. Assemble casserole: Transfer the mixture into a baking dish, spreading it evenly. Sprinkle the shredded mozzarella cheese on top to cover the surface.
  6. Bake the casserole: Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the casserole is bubbly and the mozzarella has melted and turned golden on top.
  7. Cool and serve: Remove the casserole from the oven and allow it to cool slightly before serving to enhance flavors and prevent burns.

Notes

  • Frozen spinach can be used as a convenient substitute; make sure to thaw and drain excess liquid before using.
  • For added flavor and texture, consider incorporating mushrooms or sun-dried tomatoes into the casserole.
  • This dish pairs wonderfully with rice, pasta, or fresh bread for a complete meal.
