Description

This Spicy Queso is a creamy, flavorful dip that’s perfect for any occasion. With a savory blend of ground beef, melted cheese, and spices, this hearty dip is ideal for game day, parties, or casual dinners. Ingredients

½ lb ground beef

Salt and pepper (to taste)

Pinch of red pepper flakes

½ cup shredded Pepper Jack cheese

16 oz Velveeta cheese (cubed)

1 can (14.5 oz) Rotel Tomatoes (partially drained)

1 cup black beans (drained and rinsed)

¼ cup red onion (finely diced)

¼ cup fresh cilantro (chopped)


Instructions

  1. Cook the Ground Beef:
    In a large skillet, cook the ground beef over medium-high heat, breaking it apart as it cooks. Season with salt, pepper, and a pinch of red pepper flakes (optional). Once fully cooked, drain any excess grease.

  2. Melt the Cheese:
    Reduce the heat to medium-low, then add cubed Velveeta cheese and shredded Pepper Jack cheese. Stir occasionally until melted into a smooth, creamy consistency.

  3. Stir in Beans, Onions & Cilantro:
    Add drained black beans, finely diced red onions, and chopped cilantro. Stir until combined.

  4. Add the Tomatoes:
    Stir in the Rotel tomatoes. Add some juice from the can for a thinner consistency, or leave it out for a thicker dip.

  5. Simmer and Serve:
    Let the dip simmer for another 2-3 minutes to let all the flavors meld together. Once heated through, transfer to a serving dish and garnish with extra cilantro or diced onions if desired.

  6. Serve with Chips or Veggies:
    Serve warm with tortilla chips, fresh veggies, or drizzle over nachos for an extra indulgent treat.
