Ingredients
Main Ingredients
- 8 oz noodles (ramen, rice noodles, or udon)
- 2 tbsp vegetable oil or sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp chili garlic sauce or sriracha (adjust to taste)
- 1 tbsp oyster sauce (optional)
- 1 tbsp brown sugar or honey
- ½ tsp crushed red pepper flakes (optional)
- 1 cup mixed vegetables (bell peppers, carrots, scallions, or broccoli)
- 1 tsp sesame oil
Garnish
- Sesame seeds
- Green onions, sliced
Optional Protein
- Chicken, shrimp, tofu, or eggs
Instructions
- Cook the Noodles: Prepare the noodles according to the package directions until al dente. Drain and set aside to prevent overcooking.
- Heat the Oil: In a large skillet or wok, heat the vegetable or sesame oil over medium heat to create a perfect cooking base for the aromatics.
- Sauté Aromatics: Add minced garlic and grated ginger to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn them.
- Create the Sauce: Stir in the soy sauce, chili garlic sauce, oyster sauce (if using), and brown sugar. Mix well until the sugar dissolves and the sauce is well combined.
- Add Vegetables: Toss in the mixed vegetables and cook for 2 to 3 minutes until they are slightly tender but still crisp, adding texture and freshness to the dish.
- Combine Noodles and Sauce: Add the cooked noodles to the skillet and toss everything together so that the noodles are evenly coated with the sauce and vegetables.
- Finish with Seasoning: Drizzle the sesame oil over the noodles and sprinkle in crushed red pepper flakes if you want extra heat. Stir constantly and cook for another 1 to 2 minutes to meld all the flavors.
- Garnish and Serve: Remove from heat, garnish with toasted sesame seeds and sliced green onions, and serve hot for a delightful meal.
Notes
- Adjust the spice level by adding more or less chili garlic sauce according to your preference.
- If the sauce feels too thick, add a splash of the reserved noodle cooking water to loosen it up.
- This recipe is an excellent way to use leftover or random vegetables in your fridge.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently before serving.
