Description

These Spicy Noodles are quick, bold, and packed with flavor—tossed in a savory chili-garlic sauce with soy, sesame, and a touch of sweetness. Ready in under 30 minutes, they’re perfect for an easy weeknight meal or late-night craving, featuring a vibrant mix of vegetables and optional protein for a satisfying, flavorful meal.

Ingredients

Main Ingredients

  • 8 oz noodles (ramen, rice noodles, or udon)
  • 2 tbsp vegetable oil or sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp chili garlic sauce or sriracha (adjust to taste)
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp brown sugar or honey
  • ½ tsp crushed red pepper flakes (optional)
  • 1 cup mixed vegetables (bell peppers, carrots, scallions, or broccoli)
  • 1 tsp sesame oil

Garnish

  • Sesame seeds
  • Green onions, sliced

Optional Protein

  • Chicken, shrimp, tofu, or eggs

Instructions

  1. Cook the Noodles: Prepare the noodles according to the package directions until al dente. Drain and set aside to prevent overcooking.
  2. Heat the Oil: In a large skillet or wok, heat the vegetable or sesame oil over medium heat to create a perfect cooking base for the aromatics.
  3. Sauté Aromatics: Add minced garlic and grated ginger to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn them.
  4. Create the Sauce: Stir in the soy sauce, chili garlic sauce, oyster sauce (if using), and brown sugar. Mix well until the sugar dissolves and the sauce is well combined.
  5. Add Vegetables: Toss in the mixed vegetables and cook for 2 to 3 minutes until they are slightly tender but still crisp, adding texture and freshness to the dish.
  6. Combine Noodles and Sauce: Add the cooked noodles to the skillet and toss everything together so that the noodles are evenly coated with the sauce and vegetables.
  7. Finish with Seasoning: Drizzle the sesame oil over the noodles and sprinkle in crushed red pepper flakes if you want extra heat. Stir constantly and cook for another 1 to 2 minutes to meld all the flavors.
  8. Garnish and Serve: Remove from heat, garnish with toasted sesame seeds and sliced green onions, and serve hot for a delightful meal.

Notes

  • Adjust the spice level by adding more or less chili garlic sauce according to your preference.
  • If the sauce feels too thick, add a splash of the reserved noodle cooking water to loosen it up.
  • This recipe is an excellent way to use leftover or random vegetables in your fridge.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently before serving.
