Ingredients

  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, cold and cubed
  • ⅓ cup (80 ml) milk or heavy cream
  • 1 tsp vanilla extract


Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9-inch baking dish to prevent sticking.
  2. Cook the Cranberry Filling: In a saucepan over medium heat, combine the cranberries, granulated sugar, brown sugar, cornstarch, spices (cinnamon, nutmeg, cloves, ginger), orange zest, and orange juice. Cook, stirring occasionally, until the cranberries start bursting and the mixture thickens, about 8 to 10 minutes. Then pour this mixture into the prepared baking dish.
  3. Make the Cobbler Topping: In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Cut in the cold, cubed unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the milk or cream and vanilla extract just until combined; do not overmix.
  4. Assemble the Cobbler: Drop spoonfuls of the biscuit dough over the cranberry filling. It’s fine to leave some gaps; the topping doesn’t need to completely cover the fruit.
  5. Bake: Bake the cobbler in the preheated oven for 30 to 35 minutes, or until the topping is golden brown and the cranberry filling is bubbly.
