Ingredients
6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground cinnamon
1 teaspoon paprika
1 teaspoon turmeric
1 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
Juice of 1 lemon
Fresh cilantro, for garnish (optional)
Instructions

Mix olive oil, cumin, coriander, cinnamon, paprika, turmeric, salt, black pepper, garlic, ginger, and lemon juice in a bowl.

Coat chicken thighs with marinade, refrigerate 30 minutes to overnight.

Preheat oven to 400°F (200°C).

Arrange chicken skin-side up on lined baking sheet.

Bake 20-25 minutes until cooked through.
