Description

This easy slow cooker side dish features baby potatoes simmered in onion soup mix, broth, and butter until tender and flavorful. The ultimate set-it-and-forget-it comfort food recipe.


Ingredients

2 pounds baby potatoes or Yukon Gold potatoes

1 packet Lipton onion soup mix

1 cup beef broth or chicken broth

¼ cup unsalted butter, cut into small pieces

Salt and pepper, to taste

Fresh parsley, for garnish (optional)


Instructions

  1. Wash potatoes and peel if desired.

  2. Place in slow cooker.

  3. Sprinkle with onion soup mix.

  4. Pour broth over top.

  5. Dot with butter and season with salt and pepper.

  6. Cover and cook on low for 6–8 hours or high for 3–4 hours, until fork-tender.

  7. Garnish with parsley and serve.
